About the Product
Blue Elephant yellow curry comes in one packet, and to make it you heat it up and just add water. THATโS IT. Iโm going to be honest, at first I was skeptical. How can something where you just add water possibly taste as good as the restaurant? But let me tell you guys, IT WAS ACTUALLY SO GOOD. I would not have been able to tell the difference between this curry and the one I ordered from a takeout place last weekend. I was shook. It was so fast and easy. Blue Elephant takes pride in their all natural ingredients and authenticity (made in Thailand with 100% Thai ingredients). They donโt use any preservatives, artificial coloring, or MSG. They totally delivered.
How to Make Thai Curry Udon
I started off by stir-frying some veggies and shrimp in a skillet.

Next, I added the packet of curry sauce and 1/2 cup water, as the Blue Elephant packaging suggests.


Once youโve made it this far, you can actually just serve the Thai yellow curry as is, over rice. BUT if youโre wanting to get your Asian fusion on, you can kick it up a notch with the udon.

Boil 4 servings of udon noodles and put in serving bowls. Divide the Thai curry over the four bowls. You can eat it like this, OR if you want to make it more noodle soup-y add 1/4 cup chicken broth to each bowl. Youโre done!

I served this to my parents and husband, and everyone raved how good it was. Go give it a shot!
Blue Elephant Thai Yellow Curry Udon
This Thai-Japanese curry udon uses Blue Elephant yellow curry, which you can purchase at retailers near you. It is quick, easy, and super delicious!

Ingredients
- 1 packet Blue Elephant Royal Thai Cuisine Yellow Curry
- 1/2 cup water
- 1 red bell pepper, sliced
- 1 cup green beans
- 1 cup shelled, deveined shrimp fresh or thawed from frozen
- 4 servings udon
- 1 cup chicken broth
Instructions
- Stir fry the red bell pepper and green beans in a skillet until mostly cooked through.
- Add shrimp and continue frying until cooked.
- Add Blue Elephant yellow curry sauce from packet and 1/2 cup water. Mix and allow to heat up to a gentle simmer. Set aside.
- Bring a pot of water to a boil. Add udon and cook according to package instructions. For the frozen udon I use, it only takes 2 minutes.
- Divide udon into four serving bowls. Top with the Thai curry.
- To create a noodle soup, add 1/4 cup heated chicken broth to each bowl. Serve hot!
Notes
You can substitute whatever vegetables or protein youโd like!

Can you use coconut milk instead of chicken broth?
Sure. The broth will be very thick and creamy, so you may need to thin it out with some more water, but that can be up to your preference.
