Strawberry Matcha Pinwheel Cookies

These easy pinwheel cookies are vibrantly colored by matcha and freeze dried strawberry!

Ingredients

  • 2 sticks butter 1 cup
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 3/4 tsp salt
  • 1 cup granulated sugar can sub 1.5 cups powdered sugar
  • 1 egg + 1 yolk
  • 2 1/2 cups flour
  • 1/4 cup freeze dried strawberry blended into powder
  • Optional 1 drop red food coloring
  • 1 tsp matcha
  • Flour for dusting

Instructions

  • Cream butter, baking powder, baking soda, salt, and sugar.
  • Add egg and yolk and mix until homogenous
  • Add flour and mix to combine into dough.
  • Split dough in half. Mix strawberry powder into one half and matcha into the other.
  • Roll each color dough into a 1/4 inch thick rectangle (roughly 8x11"). Place pink rectangle on top of green rectangle and roll into a long log.
  • Wrap log in plastic wrap and leave in fridge to chill 4 hours to overnight.
  • When ready to bake, preheat oven to 350 degrees and line three baking sheets.
  • Slice cookie log into 1/4 inch thick circles. Place on baking sheets and bake for 10 minutes.
