This Korean style sweet potato latte gets a natural purple color from purple sweet potatoes. You can use either Okinawan or Molokai varieties for this recipe.

1large Okinawan or Molokai sweet potato
1tbsphoney or sugar
2cupsmilk of choice
Instructions
Make mashed sweet potato: poke holes in your sweet potato with a fork and microwave for 5-6 minutes or until it can be easily pierced. Peel the skin and scoop out the flesh into a blender. You should have about 1 cup of cooked sweet potato.
Add honey and milk to the blender and blend until no lumps of sweet potato remain.
Pour blended sweet potato milk into a pot and heat on stovetop until warm. Transfer to two mugs and enjoy. Alternatively, you can pour blended sweet potato milk into a microwave safe mug and microwave until warm. Optional: pour heated latte back into the blender to make frothy before serving in mugs.
Notes
Either Okinawan or Molokai variety sweet potatoes work for this recipe.
If you don't want to microwave, you can cook your sweet potatoes in whatever way you'd normally use (e.g. baking in the oven, grilling, etc.).
