In general, smaller cuts will take less time to get the flavor in to serve as soon as possible. I don’t recommend keeping it 2-3 weeks as the acidity isn’t strong enough for standard pickling. I find this only lasts about 3 days.

]]>I would say 3-5 days in the fridge, but the longer you keep them, the less crisp and crunchy they get.
