Hi Julie, thanks for the tips! At the top of the recipe card, I write the servings. For me, I got around 14 cupcakes, so it looks like maybe your large cupcake tin is twice the size of a standard cupcake tin?

I am making this for my son’s girlfriend birthday. Introduce us to Ube cake a few years ago.
Two things I would like to mention.
1. Don’t use a plastic bowl as the extract has purple coloring. I used stainless steel, so now one of my fingers is purple💜 , but purple is my favorite color, so that’s ok.
2. Maybe I missed it, but I didn’t see where you say how many cupcakes the recipe makes. I was able to get 8 large cupcakes my tin make 6 large cupcakes.
